Cantillon Nèfle is a lambic aged on medlar fruits (which are hard and sour with high tannins, thus can only be consumed once bletted, usually by frost. After that, their consistency looks like spoiled fruits but their taste is reminiscent of apple sauce).

While at Moeder Lambic, it was explained to me that this was a failed experiment originally intended for Zwanze 2013. After several years in the cellar, Jean Van Roy and Jean Hummler tasted the beer and were pleased with how it had developed.
Nèfle was originally a failed experiment intended for Zwanze 2013. Jean Hummler, owner of Moeder Lambic, thought it still had potential and purchased the entire stock to rest for as long as it would take. About 10 years later, he judged the beer to be more pleasant and it had been served occasionally at Zwanze or during tastings organized at Moeder.
