Cantillon Nèfle

Description
Cantillon Nèfle is a lambic aged on 250 g/L of de-stoned medlar fruits (which are hard and sour with high tannins, thus can only be consumed once bletted, usually by frost. After that, their consistency looks like spoiled fruits, but their taste is reminiscent of apple sauce - not to be confused with japanese medlars, the ones used here originated from France).
History / Other Notes
Nèfle was originally a failed experiment intended for Zwanze 2013. Jean Hummler, owner of Moeder Lambic, thought it still had potential and purchased the entire stock to rest for as long as it would take. About 10 years later, he judged the beer to be more pleasant and it has been served occasionally at Zwanze or during tastings organized at Moeder.
