There is nothing quite like summer such as munching on blackberries, freshly picked from a bush on a hot August day, while walking through the country side. Our blackberries are homegrown just a short ten minute walk from the brewery. We usually harvest during the first weeks of August when the berries are just ripe, exploding with flavor and sugars, a perfect sweet sour balance. As ever, fully organic and hand picked, they are added to a tank of lambic of at least one year old the same day. This guarantees the best possible transfer of blackberries aroma to the beer. We aim for 350 gram of fruit per liter of beer. After at least six months of maturing and fermenting in a stainless steel tank and a second fermentation in the bottle for another six months, we get a feels like summer bright red color with some pinkish tones. A pleasant acidity is matched with the typical lambic flavors and the blackberry aroma comes through very nicely. Definitely to be enjoyed on a sunny afternoon or to forget about a long winter, craving for some sunshine. [1]
