The first thing that came to mind when our brewer pitched the idea of a lambic with bergamot oranges was: "Isn't that used to make perfume with? Will it taste like perfume then? Are you sure?" Followed by: "Are you really sure?" And here we are, a bergamot lambic. Some convincing brewer we have.

The bergamot oranges are grown in Sicily and honestly smell delicious. We zested about 120 kg, and squeezed a third of them. They are quite sour, so too much juice was not going to work well with the tenderness of our 1-year-old lambic. Together, this fermented on an oaken barrel for nine months. Afterwards, we diluted this concoction one to six with some more lambic until we felt the aroma from the bergamot did not drown out the lambic. We then let it referment in the bottle.

Waiting patiently for six more months, we finally have a delicious lambic with intense bergamot in the nose, as well as more subtle hints in the mouth. A very special combination indeed.
