Description

Cantillon Génépi is a lambic macerated on génépi flowers. It was brew X13 (17th December 2020), steeped on 9th August 2022 and bottled one week later, on 16th August 2022. According to Jean Van Roy, only about 60 bottles were filled. The bottle has only been available to taste at the brewery very occasionally.

History / Other Notes

Génépi flowers are primarily found in the mountains of the Alps and Pyrenees in France. The small petals impart a distinct herbal and slightly bitter flavor. Eric Rulland, a friend of the brewery, hand-picked a small amount and brought them to the brewery, where they were immediately put on lambic for maceration.
