Cantillon Brussels Sprouts Lambic was a small, experimental lambic produced around 2009.
In 2015, Jean Van Roy discussed this beer in an interview on The Sour Hour (Basic Brewing Radio) podcast, in which he said "10 years ago, we went with friends to Moeder Lambic. In this time, it was possible to get free postcards. And one of those postcards was with brussels sprouts. And we were a bit drunk, and a friend of mine told me “you never used brussels sprouts”. And I told him “I will do it”. And one week or two later, I made that experiment, very small, 20 or 30 liters. A blend of lambic with brussels sprouts. If you like brussels sprouts, it was nice. If you don’t like it, it was…it was probably the worst beer I’ve produced. But it tasted of brussels sprouts, for sure". [1]
