Pediococcus is a genus of Gram-positive bacteria of the family Lactobacillaceae. As the family name implies, Pediococcus (often called "Pedio" colloquially) can produce copious amounts of lactic acid.

Many different strains of Pediococcus are found in Lambic, and the bacteria is responsible for the primary souring of the beer, along with its close relatives in the genus Lactobacillus.
