This fruit lambic is a maceration of quinces on stainless steel for more than 9 months. After the maceration, it has been bottled immediately, without blending it with young lambic. The total fruit intensity is 32.4%, or 324 grams of fruit per litre of lambic. The weighted average age when bottled was 27 months.
Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 7th version features a range of unprecedented fruit macerations. The name (“Zotte Kadeeën” - “Crazy Kiddos”) refers to the abundant creativity of our youthful, passionate team that likes to explore and experiment, but within the traditional lambic boundaries.
