Description

3 Fonteinen Schaarbeekse Kriek Op Ton Toast is a special variant of Schaarbeekse Kriek made exclusively with young lambic and wild Belgian Schaerbeekse cherries macerated directly into the wood barrel, itseld toasted on the inside. The lambic and cherries are aged together for four months before bottling.


History / Other Notes

The brewery notes on their website that the production of this beer is often driven by the amount of Schaerbeekse cherries that can be sourced from local residents during the growing season. The Schaerbeekse Kriek cherries come from a tree that grows in the wild which is becoming increasingly scarce.[1]

Toasted barrels are burned lightly on the inside, which is a technic used with Bourbon barrels primarely to to break down wood components like lignin, hemicellulose, and cellulose, releasing flavors such as vanilla, caramel, spice, and smoke into spirits and wines (or in this case, lambic). This heat treatment also caramelizes natural wood sugars and aids in sealing the barrel, while deeper charring creates a carbon layer that filters out impurities.
