Description

Lambic fumé, sometimes called by afficionados "Lambic tourbé" (either way temporary names to be changed later, not to be confused with "Gueuze tourbée" in peated whisky barrels) is a blend of lambics from which the wort (unfermented beer) displayed a slightly smokey/peated-like profile without the use of any peated elements during he process. Spanish wine barrels were filled on february 2nd, 2024 with one year old and two years old lambic, where it spent about 6 months before being transfered to Pinot Noir barrels for an aditionnal 6 months. The blend was then bottled on december 17th, 2024.
