Description
Tilquin Assemblage is a blend of lambic created and assembled by Pierre using lambic from Tilquin barrels that was brewed by a variety of producers. This differs from a Vieux Lambic as Assemblage is a blend of lambic from multiple producers. Assemblage is served flat from a cask, and not bottled.
Tilquin receives wort from Boon, Lindemans, Girardin, and Cantillon that can all be included in the Assemblage blend when it matures into lambic.
