Geert Demuynck became a lambic enthusiast after he drank his first lambic, served still from an oak barrel at the "De Koekoek" café in the town of Asse, during a visit with his colleagues in 1981 while working for the national TV channel BRT. He started researching everything related to lambic and geuzes in general, as well as visiting breweries and public events for years.
 
In 2016, the idea of creating his own project started to bloom and things quickly started getting into place. In 2021, he founded Publitasting.
 
Most of the beers are aimed to be limited editions and original blends rather than traditionnal geuzes and krieks, using instead all kind of barrels and added ingredients with the idea to create perfect fits for original food pairings.
 
There is no plans to brew in the future as blending offers him the possibility to create many unique small batches as he pleases with more freedom.
