Jean believed that this blend would age nicely and held back 1,000 750 mL bottles from this blend. They were labeled with the yellow Cantillon Gueuze label and 1996 was written at the bottom. Around 2001, Jean brought some of these aging bottles out of the cellar. He served some at Quintessence, sent some to the United States, and sent others to [[Akkurat]] in Sweden.
