As is the tradition in a lambic brewer's family, Jean held back part of this blend for Florian. Jean believed that this blend would age nicely and held back 1000 750ml bottles from this blend. They were labeled with the yellow Cantillon Gueuze label and 1996 was written at the bottom. In roughly 2001, Jean brought these aging bottles out of the cellar. He served some at Quintessence, sent some to the United States, and others to [[Akkurat]] in Sweden.
