Overview

Geuzestekerij Odilon is a blendery founded by Thomas Singelé, located in Bever, in the south of the Pajottenland, and installed in the historic buildings of the Jouret brewery [1]

History / Other Notes

The name Odilon is a tribute to the last descendant of the Jouret family, who sold the brewery to the brothers Georges and Louis Félix Van Geersdaele in 1904, who moved the brewing activities to Pontembeek six years later. The brewery building in Bever (dated in the 1890's) was then transformed into a café with a venue, known as the ‘Folies Bergère’, before becoming a shop specialised in ‘colonial goods’ in 1942.

in 2021 and after 111 years since the last activity as a brewery, Thomas Singelé filled his first barrels with wort in the building. By mid-2024, the barrel arsenal already contained around 70 french oak wine barrels, mainly from the Bordeaux region, with a lambic stock at over 25,000 Liter.

The first bottles of Odilon fruit lambic were released on the market in the autumn of 2024, and the first geuze is planned for summer 2025.

At the end of June 2025, Geuzestekerij Odilon plans to unveil their new café-restaurant, where they will serve their own blends, as well as other beers (both lambic and otherwise) from different producers. They plan to offer guided tastings there as well and down the road, to open an AirBnB for up to 12 people in the main building, separated in two appartments (for 8 and 4 people).
