Lambic fumé, sometimes called by afficionados "Lambic tourbé" (either way temporary names to be changed later, not to be confused with "Gueuze tourbée" in peated whisky barrels) is a blend of lambics from which the wort (unfermented beer) displayed a slightly smokey/peated-like profile without the use of any peated elements during the process. Spanish wine barrels were filled on February 2, 2024 with one-year-old and two-years-old lambic, where it spent about 6 months before being transfered to Pinot Noir barrels for an additional 6 months. The blend was then bottled on December 17, 2024.
