Zwanze 2013 was released around the world on September 14, 2013. It was mostly available on draught but was also available at the brewery in 75cl bottles for drinking on premises. The beer was brewed in March of 2012 and was fermented for four weeks in stainless steel tanks before being blended with lambic. It was then transferred into 400 liter barrels of diffeent different origins, matured for six month and blended. After blending it was placed into kegs and bottles and reached 7.2% ABV.<ref name="CantillonZwanze13>http://www.cantillon.be/br/3_21 Cantillon - Zwanze 13 </ref>
The yeast was selected in collaboration with the Institut Meurice, a college in Brussels specializing in biotechnology. This means that Zwanze 13 is not a lambic, in spite of the interaction of the spontaneous yeasts at the brewery and lambic having been blended in. It is however another example of a growing number of ale / lambic blends.
