The acronym CLAC stands for '''C'''insault, '''L'''ambic, '''A'''licante, and '''C'''arignan, denoting the three grape varieties (trois cépages) and is the first Cantillon lambic to contain a blend of three different grapes. According to the brewery, each of the grape varieties were macerated separately and then blended together. The maceration of Cinsault grapes did not yield a good enough lambic to labeled as its own varietal as it had previously in 2017, so to save the Cinsault lambic, the entire batch was blended with Carignan and Alicante macerations at a ratio of 50% Cinsault, 25% Alicante, and 25% Carignan.
CLAC was served at Pasta Madre as well as at the brewery.
