Cuvée De Monk's Gueuze is a blend selected by Tom Peters, the owner of [[The Monk's Cafe]] in Philadelphia. The 2006 portion included 20 kilos of Amarillo hops that were added at the end of the boil by Cantillon with Tomme Arthur (the Lost Abbey), Adam Avery (Avery Brewing), Sam Calagione (Dogfish Head), Vinnie Cirluza (Russian River), Rob Tod (Allagash), and Tom Peters who were visiting during the 2006 open brew day.
A year laterIn 2008, Jean Van Roy believed that the batch was too hoppy and agreed to let Tom Peters to make a special bottling of that batch. Tom selected 250 liters of the 3 year old lambic with Amarillo amarillo hops, 500 liters of new wood 2 year old lambic, and 250 liters of 1 year old lambic.
