Cantillon Nèfle is a lambic aged on 250g / liter of de-stoned medlar fruits (which are hard and sour with high tannins, thus can only be consumed once bletted, usually by frost. After that, their consistency looks like spoiled fruits but their taste is reminiscent of apple sauce - not to be confused with japanese medlars, the ones used here originated from France).
