Description

3 Fonteinen/Lambic.Info Single Barrel Amontillado Lambic is a lambic aged in a single Amontillado sherry barrel and bottled in 75cl bottles. It is unblended and was bottled still. Given that there was a small amount of residual sugar remaining at bottling, it may develop a slight carbonation over time. The bottle is a vintage Burgundy style wine bottle called La Baronne and the corks used were DIAM30 rated for 30 years of stability. The bottles were finished with a wax seal.

Bottles put to rest, April 2019

During the 2018-2019 season, the idea for a single barrel selection was presented as a gift from 3 Fonteinen to us to celebrate the 5th anniversary of the Lambic.Info project and community occurring in 2020. We happily accepted and suggested that all proceeds be donated to a local Belgian charity.

On April 2, 2019, the Lambic.Info team gathered at the Lambik-O-Droom to choose and bottle the lambic directly from the barrel alongside the 3 Fonteinen team. The lambic was chosen from among three 435-liter Amontillado sherry barrels that had been deemed ready for use. The lambic selected was brewed by 3 Fonteinen on November 11, 2017, and was the 65th brew of that season.

After sitting down with the team at 3 Fonteinen, we decided that we would donate all of the proceeds from the on-site sale of this bottle, as well as the on-site sale of Speling van het Lot X.ix - Druif - Gewürztraminer, to the Kinderkankerfonds organization which is a children's cancer fund based in Belgium helping Belgian families who are experiencing childhood cancer. This charity is close to Armand's heart as well as everyone involved at the brewery and the Lambic.Info project.

Though originally planned for a spring 2020 release, the COVID-19 pandemic and subsequent shutdowns allowed for an opportunity for extended aging. Beginning on July 2, 2021, a total of 400 bottles were made available for sale at the Lambik-O-Droom for €35, for drink-in only.

The remaining bottles are being kept for extended aging and future charitable projects with no bottles being sold for takeaway.
