Tilquin Experimental Fruit Series 5
During the 2021-22 lambic season, Gueuzerie Tilquin continued their series of experimental fruit lambics (served on draft only at festivals and special events) aiming to possibly turn some of the best batches into regular production lambics.
Only one beer was produced for series #5, a new Nèfle Tilquin (originally produced for Experimental Fruit Series #4). The process was similar and resulted in 134 bottles at 7.4% ABV, but was less satisfying than the first batch and remains unreleased so far. Bottled July 29th, 2022.
History / Side Notes
Medlar is, like quince, a typically difficult fruit to work with, so result can vary largely. The fruits are very tannic and astringeant, they can only be consumed after a decen frost and once fallen from the fruit, overripe at the point of being basically mashed naturally. In beer, for that reason and how difficult they are to manipulate, it is difficult to avoid acetic acid in the final result.
