As is the tradition in a lambic brewer's family, Jean held back part of this blend for his son. More and part was bottled in 375ml bottles, labeled as [[Cantillon Florian Van Roy|Florian Van Roy]] and given to family and friends.<ref name=Jean>Jean Van Roy, Communication with Lambic.Info, February 1, 2015</ref>
Jean believed that this blend would age nicely and held back 1,000 75cl 750ml bottles from this blend. They were labeled with the yellow Cantillon Gueuze label and 1996 was written at the bottom. In roughly Around 2001, Jean brought some of these aging bottles out of the cellar. He served some at Quintessence, sent some to the United States, and sent others to [[Akkurat]] in Sweden.
