The idea came about when Stene at [[Akkurat]] and Jean Van Roy discussed this beer and thought that an uncarbonated Saint Lamvinus may let the fruit flavors come through better. Unblended Saint Lamvinus was bottled once in 2004 and sent to the Swedish beer bar. Because Akkurat received both regular and unblended St Lamvinus that year, a noting note of "stilla" (flat) was added to the unblended version.<ref name=Stene>Stene Isacsson, Communication with Lambic.Info, January 31, 2015</ref>
