Cantillon Chardonnay is a lambic blended with grape must (unfermented wine) provided by the Belgian winemaker [http://www.ruffus.be/ RUFFUS] (Vignoble des Agaises). It was blended with approximatively 25-30 % must (which already started fermentation) and 70-75% 2-year-old lambic, aged together in a 200 Liter barrel.

Description

Cantillon Chardonnay is a lambic blended with grape must (unfermented wine) provided by the Belgian winemaker RUFFUS (Vignoble des Agaises). It was blended with approximatively 25-30% must (which already started fermentation) and 70-75% 2-year-old lambic, aged together in a 200 L barrel.

RUFFUS also provided grape must for Pinot Meunier.
