Oude Quetsche Tilquin à L'Ancienne with Prunes de Namur is a lambic aged on Namur plums. This version is blended from 1 and 2 year old lambics made from Boon, Lindemans, Girardin and Catillon worts, to which fresh, destoned, skin-on Namur plums are added for a period of 4 months (except the first test batch, which was aged for almost 6 months on the fruit). The resulting, now fruited lambic is then reblended with 2 and 3 year old lambic in order to achieve a 250g/l concentration of fruit, before being bottle conditioned at the blendery for a minimum of 3 months. The resulting product is usually noticeably tarter, dryer and less fruity than the version made with Alsace plums, which is sweeter.
