Bobbi’s brewmaster is Kloris Devillé, son of Bart Devillé of the Den Herberg brewery in Buizingen. The equipment is located in Ittre (south of Brussels and Halle) where they own barley fields, but their lambic ages in oak barrels in the cellars of the Saint Géry Halls of Brussels. They have an environmental, socio-cultural and economic approach, meaning they try to reduce the environmental print as much as possible while supporting local actors with an organic market as well as a cultural space, allowing for instance to exhibit art.
