After Olivier's passing in 2021, the grapes were sourced at domaine [https://lesotdelange.fr/ Le Sot de l'Ange] in the same area. Approximatively 100 kg of grapes are added to a 400 L barrel of 2-year-old lambic, resulting in a concentration of about 250 g/L.

An offspring of the Jura wine grape savagnin, chenin blanc grapes have a high acidity and a relatively neutral palate, drawing significant variation from the growing region, vintage, and the winemakers choices of ripeness and handling.
