Cantillon Cuvée Saint Gilloise is a two year old lambic that is dry-hopped and bottled with a small amount of sugar-liquor to begin refermentation in the bottle. The dry-hopping happens in a stainless steal tank prior to bottling. It is bottled yearly in 75cl bottles, but has been available in 37.5cl on at least one occasion in 2010 and on tap at various locations.

In 2013, Cantillon made a special bottling of Saint Gilloise in both 1.5L and 3L bottles for people who owned or purchased season tickets for the 2013-2014 season.

Saint Gilloise is widely believed to be dry-hopped with Hallertau hops however Jean Van Roy confirmed that the hop varieties change based on availability and as they have sourced hops from different providers.[2]
