We zested about 120 kg, and squeezed a third of them. They are quite sour, so too much juice was not going to work well with the tenderness of our 1-year-old lambic. Together, this fermented on an oaken barrel for nine months. Afterwards, we diluted this concoction one to six with some more lambic until we felt the aroma from the bergamot did not drown out the lambic.
