Of the bottling, Tom Peters gives the following story: "On October 18, 2017, I was in Brussels with my daughter Isabel Thomas-Peters to discuss the formulation and concept for the Monk's anniversary blend with Jean. He expected to do the blending and tasting in January-February. There is only a short window of time to add the rhubarb, and Jean called me in January and said, It's time! So I flew to Brussels the day after the Eagles won the Super Bowl, and tasted barrels and blended them that day. We put all of the Nath we had identified into the blending tanks, adding the Lou Pepe Framboise and tasting out of the tanks as we went. We added the framboise to soften the astringency of the rhubarb, ending up with a end ratio of 70 ~~percent~~ Nath to 30 ~~percent~~ Lou Pepe Framboise."
