This cider-lambic hybrid is a blend of a rhubarb lambik, a 2-year-old lambik and Famille Dupont’s Cidre Triple. The latter is an unpasteurized cider made of selected bitter apples. We let it mature on a lambik barrel before further blending it. The weighted average age of this blend upon bottling is more than 25 months.
