Three organic Pajot quince varieties matured in three wooden barrels.
Before bottling the lambic is blended with an organic Pajot cider made from nordic Normandian apple varieties. Fréquin rouge, Marsenguin and Kermerrien.
Fermented and matured in oak barrels.
Carefully blended with lambic brewed from ancient local grains.
