Three organic Pajot quince varieties matured in three wooden barrels.
Before bottling the lambic is blended with an organic Pajot cider made from nordic apple varieties. Fréquin rouge, Marsenguin and Kermerrien.
Fermented and matured in oak barrels.
Carefully blended with lambic brewed from ancient local grains.
Wheat contribution from own yard. Wild and spontaneous natural beer.
This blend is made with 60 % quince lambic and 40 % cider.
Bottling date: 23 January 2021
Best before: 9 November 2041
