Description

Cantillon Génépi is a lambic macerated on génépi flowers. They were picked on August 8, 2022 and transported directly to the brewery. Then, lambic brew X13 (December 17, 2020) was steeped on August 9, 2022 and the single barrel was bottled on August 11, 2022 after a 48-hour maceration period. This is exceptionally short, since the flowers are very potent in flavor. A total of 69 bottles (approximately 50 L) were filled with no added proofing sugar. This beer has only been available to taste at the brewery very occasionally.

History / Other Notes

Génépi flowers are primarily found in the mountains of the Alps and Pyrenees in France. The small petals impart a distinct herbal and slightly bitter flavor. Eric Rulland, a friend of the brewery, hand-picked a small amount and brought them to the brewery, where they were immediately put on lambic for maceration.
