Cantillon Berce

Description
Cantillon Berce is a lambic made with Berce du Caucase, the French name for the giant hogweed (Heracleum mantegazzianum), a poisonous, invasive plant that is a member of the carrot family. It is also known as cartwheel-flower, giant cow parsnip, and hogsbane.
History / Other Notes
The idea came from Jean Van Roy having dinner at the restaurant Bouchéry in Brussels, where he tasted butter and ice cream made with an hogweed infusion which he found very original with unusual aromatics.
