Description

3 Fonteinen Druif - Dorfedler is a lambic with Dornfelder grapes added. Along with 3 Fonteinen Druif Muscat, and the Twist of Fate experiments not withstanding, it marks the first large scale commercially released grape lambic from 3 Fonteinen since Malvasia Rosso. It is bottled in 75cl bottles and listed as 9.0% ABV.

History / Other Notes

This beer is blended with Flemish Dornfelder grapes coming from Wijndomein Hoenshof. It was first released in December 2020.

01/22/2020 750ml For this Druif, we used Dornfelder grapes coming from Wijndomein Hoenshof in Hoepertingen, Haspengrouw reigion, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grap lambic with some fresh lambic wort for the "prise de mousse" in the bottle. The final fruit intensity is 51.7% of grape juice per liter of Druif Dornfelder. 100% 3 Fonteinen lambic. 3F Dornfelder 22 Jan 2020.png
12/01/2020 750ml For this Druif, we co-fermented Belgian dornfelder grapes with one and two year old lambik. We used the freshly pressed and skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two year old lambik brewed by De Troch. All lamibikken originate from seven different barrels and seven different brews.
