Description

Boon Vat 31 Monoblend is a geuze aged in foeder #31 for 4 and a half years. It was brewed on November 30, 2015, and bottled on May 14, 2020. It was released in 375ml bottles and is labeled as 8.5% ABV.

History / Other Notes

Tasting notes: A delicate, soft and fine Oude Geuze. It has a fine sparkle and a pleasant cognac-like nose. The velvety soft yet firm aroma with notes of apricot and nuts is underpinned by a clear oak character.

History: Foeder #31 is a large oak barrel, built between 1905 and 1908 by the Bodenheim company from Kassel (Germany). It arrived in a Brussels Lambic brewery in 1919 as part of a large batch of material sent to Belgium as compensation for “war damage '14 -'18”. The cask served in this old lambic brewery until 1988, and was then sold to Brouwerij Boon along with about 20 casks. These casks were first used to ripen 1-year lambic for Oude Geuze Boon. Since 1992, the casks that supplied the finest Lambic were eventually reserved for the production of Geuze Mariage Parfait, including #31.

Repair history: In 2008, the cask was due for a major overhaul and cracks were found on the underside. In the coopers workshop at Brouwerij Boon, foeder #31 was partially dismantled in 2009, and 12 staves were replaced with new oak. Once overhauled, foeder #31 produced the following results: the new oak staves added extra aromas, and the existing 100-year-old microflora in the barrel wall produced a particularly fine lambic every time after 3 years of maturation.[1]
