Gueuze du Tilleul

Description
Gueuze du Tilleul is the first gueuze produced by Gueuzerie Tilquin as a brewer, and not as a blender. In that regard, it is the first ever 100% Waloon gueuze. It is made of 100% Tilquin brewed lambic of 1, 2 and 3 year old, mashed with 60% organic malted barley and 40% organic raw wheat.
History / Side Notes
On January 27, 2022, the first 100% Tilquin lambic was brewed. After spending the night in the coolship, the wort went into two 500 L barrels, with the aim not to replace the production of the blendery, but to experiment and eventually produce a small volume of 100% organic Tilquin gueuze. The first batch was blended on March 24th, 2025, composed of 50% 1-year-old-lambics, 25% 2-year-old lambics and 25% 3-year-old lambics.
It was bottled the following day and 5,300 750 mL bottles were produced, with the plan to bottle a batch in 375 mL format the following week. This new gueuze will carry both a different design and name from the regular gueuze blend: "Gueuze du Tilleul".
The reason behind the fact this first batch won't be released as an "Oude gueuze" is a high level of bitterness, indeed the hops used have not been tested prior to the blend and might have not been aged long enough and/or used in too high a quantity, as a result the level of Iso-alpha acid is most likely too high to fit into the Protected Geographical Indication (PGI)'s new guidelines from 2026 forward, establishing a maximum of 10 PPM of Iso-alpha acid per Liter of lambic to fit into the "Oude geuze" category. For future batches, the quantity of aged hops will dop from 6 gramms to 4 gramms per liter.
Release for this first batched is planned for Toer de Geuze 2026, with 5500 bottles made in 750 mL format and 11,000 bottles in 375 mL format.
