Kloeckera is a genus of yeast found in Lambic, as well as in other fermented products. Yeasts of the genus Kloeckera are the first yeasts to colonize the wort large-scale, preceeding the dominance of Saccharomyces. Strains of the species Kloeckera apiculata become detectable in the first days after brewing and reach a maximum concentration of about 10^5 cells/mL after about a week.
