Here at Cantillon, we’re no strangers to experimentation.
In the early 1950s, Paul Cantillon tried blending lambic and oranges. The result wasn’t exactly spectacular. The refermentation in the bottles was so strong that the brewery workers at the time were forced to sprint past the bottles through the cellar in order to avoid being hit by popping corks and drenched in beer. Our grandfather Marcel Cantillon loved this story, and often loved to tell it to us as children.
So 70 years later, inspired by our great-grandfather, we’ve made a special blend of lambic and citrus (a blend featuring mostly oranges) in his honor. The acidity of the beer and the fruit and the freshness of the citrus in contrast to the bitterness of their zests makes for a particularly thirst-quenching Zwanze.
The name Parasol will remind my fellow Belgians of a certain age of the orange-flavored soft drink of the same name we used to drink back in the day.
This year’s Zwanze Day will be held on Saturday, September 25th. The event will be worldwide once again, and a list of participating locations will be published in August.

==Zwanze Day, 2022==

This year’s Zwanze is a two-year-old Lambic blend with black pepper. For this year’s beer, we worked with Sandrine from Misao: La Maison des Poivres here in Brussels. 
Sandrine had us try various types of Congolese pepper, and we eventually decided on one called poivre de Gorilles.
This pepper grows wild in the forests of the Republic of the Congo. Aromatic, but not too spicy, it blends beautifully with the refreshing acidity of our Lambic. The result is a beer that will pair marvelously with meat or fish.
The name poivre de Gorilles comes from the area where it grows, in Likouala Forest, located in the northeastern region of the Republic of the Congo. This forest is home to a significant population of Lowland gorillas – a species in danger of extinction.
That’s why we’ll be donating a portion of the profits from the event to Gorilla (https://www.gorilla.fr/), an organization which works to protect these Great Apes.

A little over a year ago, we were in Brittany to submerge a few dozen bottles of Gueuze in the sea as a collaboration with Sylvain, an abalone farmer in Finistère. These bottles are still fermenting at a depth of 10 meters in the company of his charming creatures.
Once a month, Sylvain brings up the cages to add various types of algae for the mollusks to feed on. We tasted these same algae in tartare during our visit, and the idea came to us to try them in maceration with Lambic to create a partnership between the brewery and Sylvain's company. After several attempts, it turned out that seaweed, specifically the sea lettuce, gave the best result.
The beer is, of course, very different from the fruity, vinous, or floral tastes traditionally found in our products. This Zwanze 2024 exudes aromas of exotic fruits; it has notes of iodine with a slight salinity reminiscent of oysters. In short, a very different beer from what we are used to discovering at Cantillon - a true Zwanze!
