Cantillon Bière du Dragon was a top-fermented pure malt beer, not lambic. According to Jean-Pierre Van Roy<ref name=JPVR25>interview with Gael of lambic.info, November 2025</ref> it was inspired by a 19th century beer from the town of Lambeek with the same imagery, and was brewed in 1925 by Paul Cantillon. Being similar in style to the pure malt beer ''Speciale Aerts'' by brewery Aerts, it lead to some troubles for Paul down the road. Indeed, the ''Speciale Aerts'' was very popular at the time and not all pubs were able to obtain it to sell in their establishments. Since both beers were pure malt and had a close aromatic profile, many publicans started selling Bière du Dragon as Speciala Aerts, duping their customers, who noticed. The brewery Aerts heard of it sued Cantillon who lost in court (despite the situation not resulting from their own doing), which was tough for Paul at the time. | |||

Side Notes
At the time, Cantillon wasn't brewing yet and Paul was buying beer wort from different breweries to age himself in barrels as he pleased. The wort for this top-fermented beer wasn't different : it was purchased and "raised" by Paul.
