Timorasso (a grape native to the Tortona area in the southeast of Piedmont) is rare and almost disappeared during the 20th century. It is making a comeback thanks to producers and other prominent members of the wine scene, especially Walter Massa (as well as a small group of producers friends joining him, calling themselves the "Derthona Dreamers Team"), who worked hard to convince wine sommeliers to give the grape a chance at a time when inexpensive white wines were leading the market. Timorasso needs time to reach its potential, but is very rewarding. Some say this grape is still one of the best kept secrets of Italy. | |||

Description
Lambic aged on 350g/L of Timorasso grape from I Carpini in the Emilia-Romagna region in Italy. The beer was blended on October 13th, 2020 and bottled on September 9th, 2021, but the result wasn't satisfying right away so it remained in the brewery's cellar to age a few more years until deemed ready. Until 2025, it went under the name "Timorasso" when opened for friends at Cantillon's taproom, before being renamed "L'Éclat".
