Description
Cantillon Génépi is a lambic macerated on génépi flowers. They were picked on August 8, 2022 and transported directly to the brewery. Then, lambic brew X13 (December 17, 2020) was steeped on August 9, 2022 and the single barrel was bottled on August 11, 2022 after a 48-hour maceration period. This is exceptionally short, since the flowers are very potent in flavor. A total of 69 bottles (approximately 50 L) were filled with no added proofing sugar.
