Cantillon Trousseau is a lambic made using grapes from Domaine Stephane Tissot. The blend includes Trousseau grapes macerated for three months in amphore and two-year-old lambic.

Stéphane Tissot from Domaine André et Mireille Tissot is a close friend of Jean Van Roy and Cantillon with whom he collaborated for years, providing grapes for various lambic cuvées as well as barrels for La Vie est Belge.
 
The Trousseau grape originates from the Jura region in France (though a few parcels are also found in other areas as a result of variety exchanges dating back to the original Camino de Santiago pilgrimages; in these areas the grape is carrying different names. In Galicia or Portugal - where it is used in the ellaboration of Port or Madera wine - it is called bastardo, or bastardinho). It's a light red grape, though it has more structure and tannins than Poulsard, the other iconic red grape originating from Jura. It can also display some animalistic notes in the final wine, as well as spicy peppery hints.
 
Montigny-lès-Arsures (where Domaine Tissot is located) is known as the "Trousseau capital" of the world, taking pride in cultivating it in some of the finest plots, such as "Les Corvées Sous Curon" which gave the name to the "La Corvée" bottling at the brewery, using both Trousseau and Poulsard from this plot.
