A new variant of lambic macerated on quince, different from the one created for EFS#2. In this version (called "Tilcoing" instead of "Coing Tilquin"), no Meerts was used, only 1 and 2-year-old lambic, where fruits were cut into pieces and added for maceration at 300g/L. Bottled April 4th, 2023.

Made from the fermentation of honey from Les Ruchers du Larzac (from the Larzac region in France) in a blend of 1, 2 and 3-year-old lambics. Unfiltered and unpasteurized, this beer was refermented in the bottle with again that same honey. 95 bottled of 75cl were filled, only available to drink onsite at the taproom of the blendery.
