Then, lambic brew X13 (17 December 17, 2020), was steeped on August 9th, 2022 and the single barrel was bottled on August 11th, 2022 after a 48-hour maceration period. This is exceptionally short, but was opted for since the flowers are very potent in flavor. A total of 69 bottles were filled (approx. 50 liters), with added liqueur to achieve secondary fermentation - similar to the Lou Pepe series. This beer has only been available to taste at the brewery very occasionally, mostly during the annual Public Brew Day or Quintessence. | ||

Génépi flowers are primarily found in the mountains of the Alps and Pyrenees in France. The small petals impart a distinct herbal and slightly bitter flavor. Description
