Lambic | Lambic Fumé, sometimes called by afficionados "Lambic Tourbé" (either way temporary names to be changed later, not to be confused with "Gueuze Tourbée" in peated whisky barrels) is a blend of lambics from which the wort (unfermented beer) displayed a slightly smokey/peated-like profile without the use of any peated elements during the process. Spanish wine barrels were filled on February 2, 2024 with 1-year-old and 2-year-old lambics, where they spent about 6 months before being transferred to Pinot Noir barrels for an additional 6 months. The blend was then bottled on December 17, 2024. | ||
