The fruit was a Morello (variety: Kelleris) sour cherry sourced in Belgium. The cask of lambic brewed in january 2007 was hand selected by Tom Peters of [http://www.monkscafe.com Monk's Café] and Jean Van Roy on September 4, 2008, it was originally supposed to be blended with more straight lambic and become a bottling of regular Kriek 100% lambic, but its character was interesting so it remained unblended with a concentration of 300 g cherries per liter. Kegs were filled on September 26, 2008.
