Cantillon Lambidre Fermier de Bruxelles was a lambic aged on sour apples produced in the late 1980s in collaboration with Yvan De Baets of Brasserie de la Senne (way before the brewery was created). The apples were sourced from a tree in the garden of Yvan's parents.<ref name=LambicInfoConvo>Lambic.Info Interview with Jean Van Roy, October 2016</ref> When asked about it in 2025, Jean Van Roy said quantities were probably similar to other fruit infusions they do, so about 300 g/L. Though it wasn't terrible, it wasn't particularely good and the beer was thrown away and never poured anywhere, not even at the brewery.
